Decanting wine explained

Decanting wine means carefully pouring it into a carafe before serving. This serves two important purposes: separating the wine from any sediment and allowing it to breathe . Exposure to oxygen rounds out the aromas, softens them, and adds complexity.

The effect is greatest when the wine is gently agitated. A well-designed decanter increases contact with oxygen, allowing the wine to aerate more quickly and its aromas to develop more fully.

Step 1: Prepare the wine

Stand older wines upright before opening the bottle to allow sediment to settle to the bottom.

Step 2: Pour into the carafe

Pour slowly and carefully, leaving the sediment in the bottle. For younger wines, you can pour a little more vigorously to add more oxygen.

Step 3: Let the wine breathe

After pouring, let the wine rest for a while.

  • Young wines: 15–30 minutes
  • Old wines: 10–15 minutes

Step 4: Enjoy the result

Decanting removes sediment, allows the wine to breathe, and enhances both aroma and flavor. This allows each wine to reach its full potential – exactly as the winemaker intended.

FAQ

What is the purpose of decanting?

Decanting separates the wine from any sediment and allows it to breathe. This releases aromas more effectively, resulting in a smoother, fuller flavor.

How long should you decant wine?

Young red wines usually need 15–30 minutes to decant. Older wines are best decanted for a shorter period to preserve their delicate aromas.

Which wines benefit most from decanting?

Especially full-bodied red wines like Cabernet Sauvignon, Syrah, and Merlot. Some full-bodied white wines can also benefit from a little aeration.

Can you decant wine for too long?

Yes. Too much oxygen can weaken the flavors and aromas, especially in older wines. Therefore, decant these wines just before serving.

How exactly does a decanter work?

A well-designed decanter increases the contact between wine and oxygen. Gently swirling or moving the wine aerates it more quickly, allowing its aromas to fully develop.
